Soft & Fluffy Scrambled Eggs



 These are no regular scrambled eggs.  This technique to cook them isn't your usual technique but it sure does make them really special.  It produces scrambled eggs that are soft and fluffy and do not disappoint.  



You will start by putting cold cubed butter into the eggs.
You then pour the eggs into a cold skillet and begin to stir them slowly over a low flame.  This silicone spatula from Le Creuset is my favorite.  It has a rounded end on one side and on the opposite side has a square cut.  The top edge is perfect for scrapping.  Just like you need to do with this cooking techniqe.  I've had my Le Creuset spatulas for many years.  They look almost like brand new and have never stained.

Soft & Fluffy Scrambled Eggs

The easiest and most delicous way to cook scrambled eggs.

ingredients:

  • 3 large Eggs
  • 2 TBLS Cold Butter, cut into small cubes
  • Salt and Pepper to taste

instructions:

  1. Crack eggs into a bowl and whisk together.
  2. Add cubes of butter and stir into eggs.
  3. Pour the eggs and butter into an 8-inch non-stick skillet placed on top of the stove. 
  4. Turn heat to low and with a silicone spatula begin by running the spatula around the outer edge of the eggs. The place where the eggs meet the skillet.  As the eggs cook they should fall over to the inside of the pan.  Just keep repeating this process, along with occasionally moving the spatula to the inside of the skillet.  Turning up all of the cooked eggs so that the hot butter gets mixed with all of the eggs. This will keep the eggs soft and should create soft and fluffy scrambled eggs.
  5. About 3 minutes from the eggs being fulled cooked remove the pan from the heat and continue softly stirring until the eggs are just cooked and no longer runny.  Overcooking the eggs will make them tough.
  6. Sprinkle with salt and pepper.  Adding the salt when you are cooking eggs will also make them tough.    So it's best to add salt after they are finished cooking.
