Baked Low Carb Meatballs

When first starting a low carb diet there were a few foods that I knew I would have to give a low carb makeover to if I wanted to continue on this new way of eating for the long haul.  And meatballs where one of those foods.  We use them for so many different keto dishes.  From Meatball Cloud Bread Sandwiches to Baked Low Carb Meatball Casseroles.

Baked Low Carb Meatballs

Baked Low Carb Meatballs, Low Carb, Made with Beef & Pork Rinds Makes 10 Meatballs. 2 Meatballs per serving. Total Recipe makes 5 servings

ingredients:

  • 1 lb Ground Beef (80/20)
  • 1/2 tsp Dried Ground Oregano
  • 1/2 tsp Dried Italian Seasoning
  • 1/2 tsp Dried Onion Powder
  • 1 clove Garlic, minced
  • 1 TBL Tomato Paste
  • 3 TBL finely crushedPork Rinds
  • 1 large Egg
  • Salt and Pepper to taste
  • Hot Pepper Flakes (optional)

instructions:

  1. Preheat oven to 400 degrees.
  2. Place all ingredients in a largemixing bowl, and mix together with hands.  Do not over mix or they will be tough.
  3. Using a  cookie scoop form into 10 balls then roll between the palms of your hands. Make sure and do not pack the balls tightly. 
  4. Place evenly spaced apart on a cookie sheet and bake for approximately 20 to 30 minutes or until they are no longer pink in the middle.
  5. Remove from oven then cool.  
  6. Once cooled they can be placed into a ziplock bag and frozen for future use or used immediately.

NOTES:

This recipe is easily tripled.  Which makes it excellent for food prep because the meatballs  freeze well.
