Easy Breezy End of Summer Berry Smoothie





As summer comes to a close here in Ohio something concerning has happened.  It was 90 degrees the other day.  Does Fall not know that I am VERY ready for it to make an appearance?  Here I sit, dreaming of nippy mornings and the arrival of leaves falling from the trees in a blanket of colors that will take you breath away, and we have warmed up to summer temperatures.  Oh well, at least it isn't snowing.  But, if you know Ohio weather, then you know that is always a possibility with the arrival of tomorrow.  And that is one of the reasons that I love Ohio so much.  

Hmmm, now how did I get off of the subject of a nice cold low carb berry smoothie?  Oh , that's right.  It is hot here so even though I'm ready for Fall, I will enjoy a VERY easy, yet delicious, end of summer berry smoothie while the last days of summer enjoy a grip on North Eastern Ohio.

 

End of Summer Berry Smoothie

Very quick, easy, low carb and delicious strawberry smoothie drink

ingredients:

  • 8 oz.  Unsweetened Vanilla Macadamia Milk (Milkadamia is my favorite brand)
  • 1/2 c. Frozen Unsweetened Strawberries
  • 2 TBLS Organic Heavy Whipping Cream
  • 1/2 tsp Vanilla Extract
  • Few drops (to taste) of a liquid low carb sweetener

How to cook End of Summer Berry Smoothie

  1. Place all ingredients into an electric blender. Blend on high until until the berries have been completely broken down into an icy yet smooth consistency.  And that's it.  Enjoy!

NOTES:


Using frozen berries will make the beverage nice and cold. If you use fresh berries then just add a few ice cubes.
Any low carb berry such as raspberries, blueberries, and blackberries would also work.
 You can also replace the macadamia milk with unsweetened almond milk. 
Since this recipe only makes 1 smoothie it will fit nicely into a small Nutribullet.
