Mini Low Carb 3-Layer Brownie Cake

This adorable little cake is not only pretty but deliciously low carb, rich and decadent. A "once in a while" low carb sweet treat for Valentine's Day or any other special occasion.  And to top it off, the effort to create this little yummy gem is very easy because it uses a pre-made low carb brownie mix from Good Dee's.

Enjoying a rich and decadent low carb dessert like this one, every once in a while, has allowed me to live a low carb lifestyle for the long run. I do not feel deprived. It makes my WOE (way of eating) sustainable. I hope that you enjoy this Mini Low Carb 3 Layer Brownie Cake as much as I enjoyed creating it.

Triple layer brownie cake between cream cheese frosting topped with fresh strawberries


Mini Brownie Cake
  • 1 pkg.  Good Dee's Chocolate Brownie Mix
  • 3 large Eggs
  • 1/4 c melted Coconut Oil, cooled
  • 8 to 10 Small Fresh Strawberries
Low Carb Cream Cheese Frosting


Mini Brownie Cake
  1.  Grease 3 round 5-inch x 2-inch cake pans well. In a medium bowl, whisk together the cake mix,   eggs,  and coconut oil until well incorporated. 
  2.  Divide the cake batter between the prepared baking dishes and bake according to the package directions.
  3.  Let cool in pans, then run a sharp knife around the inside of the pans and flip out.
  4. Place one layer of the cake onto a plate and top with a third of the frosting.  Repeat with each layer.
  5. Top with fresh strawberries
Low Carb Cream Cheese Frosting
  1. Mix all ingredients together  in a medium bowl using an electric hand mixer
  2. Divide into thirds in equal amounts so that you have enough frosting for all 3 layers of the brownie cake.  


If you do not have powdered low carb sweetener than you can use granulated.  You will just have to use a food processor or coffee bean grinder to turn it into a fine powder. If you use regular granulated sweetener than you will have to use more than 1/3 cup. Sweeten to taste.
