Low Carb Holiday Ham


This ham not only feeds a crowd for any holiday get together, but it won't take you off of your low carb/keto plan.  It's deliciously sweet and salty.  Just like any yummy traditional ham.  Plus, the sweet dijon gravy will leave you licking your fingers while you are cutting the ham into slices. 

In the past, for may years, my holidays were filled with not only a ton of carbs that left me sleepy at the end of the meal but many times included a ham made from Dr. Pepper and lots of brown sugar.  Most of us have had one of those hams at one time or another.  Fortunately, with just a few adjustments, it's just as easy to give that old syrupy carb loaded ham a low carb, but oh so delicious twist.  And believe me when I say that any and all carbivores sitting around your holiday table will NEVER know that your Holiday Ham has been given a low carb makeover.

Low Carb Baked Ham with Sweet Gravy

How to cook Low Carb Holiday Ham

  1. Preheat oven to 325 degrees.
  2. Unwrap ham and pat dry.
  3. Sit ham into stainless steel 12 in. baking pan *see note*  and with a sharp knife cut 1/2 in. deep criss cross marks (scoring it) all over the surface of the ham. 
  4. Pour the Diet Dr. Pepper all over the ham.  Using enough so that the soda rises halfway up the sides of your baking pan.  Set aside.
  5. In medium saucepan whisk in mustard, brown sugar substitute and sf maple syrup.  Bring to a boil and simmer until the brown sugar has dissolved.  This will make a thin dijon glaze.
  6. Pour the dijon glaze all over the top of the ham allowing it to fall all over and coat the sides of the ham.  Sprinkle the diced pickles on top of the ham. 
  7. Place ham in oven and baste every 20 minutes.  
  8. Cook the ham 15 minutes for every pound.  For a 7 lb ham this should take about 1 hour and 45 minutes. 
  9. Remove ham from oven once it is done.  Move ham to a board and slice.  Place slices onto a serving platter and cover with foil to keep warm.
  10. Place your baking pan (must be stovetop safe) and simmer on high until the juices are reduced by half.  This will make a thick sweet gravy.  Pour the gravy on top of the ham slices and serve. 

NOTES:

The way that I have written the recipe assumes that you will be using a 12 inch stainless steel pan where the sides are about 2 to 3 inches deep. That is not only oven but also stove top safe. In the recipe instructions I have linked to the one that I use. This is the perfect pan because everything from baking the ham to creating the sauce can be done in this Cuisinart pan. This pan can be used for a hundred different things from baking a casserole to sautéing veggies to even making breakfast. It has endless uses.
