Sauteed Steak Toppers




Sauteed onions and garlic with crushed red peppers makes for the most wonderful topping on a steak. My my, oh my!  This is why I love a low carb way of eating so darn much.  I get to not only eat steak but, eat steak topped with deliciously caramelized onions in butter and avocado oil.  No wonder why I have been able to stay on a low carb way of eating (WOE) for so many years.  Gone long ago are the days when I would eat tasteless low-fat food.  

Do not ever let anyone tell you that a keto and low carb diet is not sustainable. Who wouldn't enjoy eating this way on a regular basis?  


Yield: 6, 1/4 cup servings

Sauteed Steak Toppers

Caramelized red and yellow onions in butter and avocado oil with garlic and red pepper flakes

ingredients:

  • 2 TBLS Butter
  • 1 TBLS Avocado Oil
  • 1 large Red Onion (218 grams)
  • 1 large Yellow Onion (275 grams)
  • 1/2 tsp Salt
  • 2 cloves Garlic, minced
  • 1/4 tsp Red Pepper Flakes

instructions:

  1. Clean the onions, cut them in half, then slice them into half rounds.
  2. In a cast iron or stainless steel skillet melt the butter and avocado oil over medium-low heat.
  3. Add the onions and salt and saute for 20 to 30 minutes over medium-low heat until the onions get caramelized.  Soft and light brown.  Scrapping up any yummy brown bits from the bottom of the skillet.
  4. Add the garlic and red pepper flakes and cook for an additional 5 minutes. 
  5. Taste and add more salt if necessary. 

NOTES:

Onions can be a bit carby when compared to other low carb veggies.  However, I have always felt that when I write and develop a recipe that the serving sizes must be rooted in reality.  How much would my  family and I really eat within a low carb diet?  I have never eaten only 2 Tbls of caramelized onions.  Yes, if  I kept the serving size for this recipe artificially low then the carb count would be *really* small.    

The serving size amount for this recipe is 1/4 cup each.  That is just the right amount to top a steak or any other protein.  The carb count is still low at 1/4 c. and is enough to satisfy our appetite.
