Keto Pan Fried Chicken for 2

Over the many years that I have been, "low carbin' it", one thing is for certain.  Having a few really quick, really yummy chicken dishes in my recipe stockpile is crucial.  Those dishes that are so easy that you are able to recall them immediately.  Dishes so convenient that many times you have all of the ingredients on hand at any given time.  For me, this dish is one of those.

Keto Pan Fried Chicken for 2

Pan fried Chicken Breasts topped with sautéed grape tomatoes and feta.

ingredients:

  • 2 TBLS Butter
  • 2 Boneless Skinless Chicken Breasts 
  • 1/2 c Grape Tomatoes
  • 1/3 c. No Sugar added Italian Dressing
  • 2 oz. Feta, crumbled
  • Seasoning Salt

instructions:

  1. Begin by pounding  out chicken with a meat mallet so it is all the same thickness.
  2. Season both sides of chicken with seasoning salt and set aside.
  3. Melt butter in medium high skillet.  Add chicken and cook on both sides until no longer pink in the middle.
  4. Transfer  chicken to a plate and cover with foil.  
  5. Add the tomatoes to the skillet and poke each one with sharp knife.  Stir occasionally, and as the juices run out of the tomatoes they will deflate slightly and create a thick sauce.  Slowly pour the Italian dressing into the skillet and continue cooking until it gets hot and thickens and the tomatoes become coated with the sauce.  This will only take about 3 minutes. 
  6. Taste for seasoning.  Plate chicken and add tomatoes and feta on top before serving.  

NOTES:

*The nutritional info I have provided doesn't include the broccoli since you can change this up in with many different low carb veggie options.   I often serve this over either riced cauliflower, riced broccoli, and even sautéed shredded cabbage.
